After watching the opening ceremony, I was inspired to link into this. It's not about who wins, but yes, we still want to know! Since NBC has most of the rights tied up, here is a website where you can lookup what's on each day - hosted by NBC. You can also checkout what is actually live and watch it right there and then! I think this makes for many late nights..
How can we use these Olympics to educate the kids? Easy, put out an atlas next to the television; everytime someone gets a medal from a different country, mark it on a world map. Go back and watch a replay of the opening ceremony - get the kids to notice how the national dress for each country, which continent they are from, the population in the country and the number of athletes they have sent. The opening ceremony also had a great visual summary of the highlights of Chinese history.
